The Vice President of Food and Beverage is responsible for managing
and overseeing all aspects of the administration and daily
operations of the Food and Beverage department. The Vice President
of Food and Beverage will perform all duties within the guidelines
of the Seneca Gaming Corporation's policies and procedures,
Internal Control Standards and objectives. EssentialFunctions and
Responsibilities:
Responsible for directing and supervising Food and Beverage
Director, Executive Chef, Executive Steward, Beverage Manager,
Director of Catering & Banquets, Remote Outlet Manager, and
Restaurant Room Managers as well as all Food and Beverage
employees.
Recommend restaurant opening and closing times, new venue ideas,
and staffing levels to the General Manager, COO or
President/CEO.
Monitor the budget to ensure that the department runs efficiently
in order to achieve established fiscal and performance goals, and
recommends changes to enhance profitability.
Conduct regular cover count, check average, food and beverage costs
and projection analysis to maximize profitability, and controls all
costs.
Assist in the development and implementation of the Food and
Beverage policies and procedures.Develops departmental procedure
manuals and ensure proper documentation and storage of all relevant
materials.
Responsible for the development and implementation of training
programs for all areas of the Food and Beverage department in
conjunction with the Human Resources Department.
Communicate regularly with managers and keeps them informed on all
Casino and Food and Beverage activities and events, including
marketing events.Communicate regularly with employees and keeps
them informed on all Casino activities and events.
Ensure proper and cost efficient staffing levels and work schedules
in order to provide a high level of service with minimum labor
hours.
Ensure service standards are being met consistently at each F&B
outlet.
Develop new or refreshed menu selections for our guests to ensure
creativity, seasonality, and variety on a quarterly basis. Use
market research and analysis to justify changes.
Develop new or revised restaurant/bar/ dining concepts as part of
development of all F&B offerings, in sync with overall property
plans.
Position Requirements Qualifications/Requirements:
Must demonstrate leadership, fairness, and sensibility to the
patrons and employees.
Must possess ability to instill a sense of pride and personal
responsibility in subordinate employees.
Education/Experience:
Must be 18 years of age or older upon employment.
Bachelor's degree required; advanced degree preferred.
Previous customer service experience required.
Minimum of fifteen (15) years of experience required with at least
ten (10) years of food and beverage management experience and five
(5) years of senior management experience in a multi outlet
facility with annual revenues of at least $40 million and a staff
of 600.
Experience creating, developing, implementing service standards for
a 4 Diamond resort.
Experience with menu development, costing and analysis of items for
profitability.
Experience with development of restaurant concepts, both gourmet
and casual high volume.
Experience managing and setting standards for high end gourmet
restaurant.
Experience developing a comprehensive beverage program including
casino service bars, lounges, night club and extensive wine
list.
Must be able to evaluate statistical reports and other business
reports.
Knowledge of all phases of Food and Beverage administration, cost
control, and familiarity of all beverage services is required.
Excellent interpersonal, customer service, communication, coaching,
team building and problem solving skills.
Must possess and maintain a valid driver's license and be able to
substantiate a safe driving record within the parameters acceptable
to our liability insurance carrier.
